- 2 lbs chicken wings
- Salt and pepper to taste
- 1 tbsp olive oil

For the Cherry BBQ Sauce:
- 1 cup fresh or frozen cherries, pitted
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tbsp honey
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions:
- Prepare the Wings:
- Preheat your oven to 400°F (200°C).
- Season the chicken wings with salt and pepper, then drizzle with olive oil.
- Place the wings on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 40-45 minutes, turning halfway through, until they are crispy and golden brown.
- Make the Cherry BBQ Sauce:
- In a medium saucepan, combine the cherries, ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, smoked paprika, garlic powder, and onion powder.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Reduce the heat to low and let it simmer for about 15-20 minutes, until the cherries are soft and the sauce has thickened.
- Use an immersion blender or a regular blender to blend the sauce until smooth. Adjust the seasoning with salt and pepper.
- Coat the Wings:
- Once the wings are cooked, remove them from the oven.
- Toss the wings in the cherry barbecue sauce until they are well coated.
- Serve:
- Arrange the wings on a serving plate, garnish with fresh herbs, and serve with extra sauce on the side.
