Cherry Barbeque Chicken Wings

Ingredients:

  • 2 lbs chicken wings
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh herbs for garnish

For the Cherry BBQ Sauce:

  • 1 cup fresh or frozen cherries, pitted
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Wings:
    • Preheat your oven to 400°F (200°C).
    • Season the chicken wings with salt and pepper, then drizzle with olive oil.
    • Place the wings on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for 40-45 minutes, turning halfway through, until they are crispy and golden brown.
  2. Make the Cherry BBQ Sauce:
    • In a medium saucepan, combine the cherries, ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, smoked paprika, garlic powder, and onion powder.
    • Bring the mixture to a simmer over medium heat, stirring occasionally.
    • Reduce the heat to low and let it simmer for about 15-20 minutes, until the cherries are soft and the sauce has thickened.
    • Use an immersion blender or a regular blender to blend the sauce until smooth. Adjust the seasoning with salt and pepper.
  3. Coat the Wings:
    • Once the wings are cooked, remove them from the oven.
    • Toss the wings in the cherry barbecue sauce until they are well coated.
  4. Serve:
    • Arrange the wings on a serving plate, garnish with fresh herbs, and serve with extra sauce on the side.
